Nose: Aromas of sour cherries, violet and liquorice.
Mouth: A pleasant juicy and savoury texture.
Recommended food pairings: Smoky cured beef, charcuterie, chilli with meat.

Growing conditions: 280-300m above sea level, making it one of the highest vineyard in Cahors. Wines from the high altitude plateau are fresher and more elegant than the rich and sometimes heavier Cahors from the valley terraces.
Winemaking notes: Natural fermentation, using indigenous yeasts taking place in temperature controlled stainless steel or lined concrete tanks. Short maceration of eight days to maintain a fresh and crunchy fruit character. Ageing: Fruit is aged in concrete for few months in order to create a smooth texture. Sulphites: Minimal, only after malolactic fermentation.
